This morning we had our first little snow flakes! Nothing came of it but that is a true sign that it’s really winter now and fall is officially over. This is the only time that I love winter because the holiday season is in full swing and I’m loving every second of it. Nothing like cold weather to make the house seem cozy and festive and so I accept it until January hits. Then I just resent it since it’s all doom and gloom.
This morning, despite the cold I had to drink a massive green smoothie to continue on my gentle detox. It has to be gentle since I’m nursing.
In this smoothie I put strawberries (saved from my spring garden), bananas and TONS of kale (also from the garden). I needed the extra greens for sure and they make me feel SO good.
I was out of fresh bananas but I always keep a bag of frozen bananas in my freezer just in case. I sometimes like having them frozen because they give the smoothie a different texture.
I usually buy a bulk amount of bananas when they’re on sale and just chop them up to freeze. That way I save money and stock up at the same time.
I also cooked black beans today. However, I was dealing with the teething baby and forgot to add more water and so the bottom burned!
I still got plenty of great beans out of it though and it inspired a tasty lunch too! I just put some lettuce, potato wedges (that I made yesterday) a tomato, black beans and hot sauce in a bowl….um, DELISH!
One of my better lunches in quite a while. I tend to fall back to the onion with salad and a baked potato but since I’m out of onions and still haven’t made a run to the store (maybe today!) I had to be creative. Maybe our separation is a good thing. haha
And now I’m off to try and slip in a shower while my teething baby is sleeping. He doesn’t give me much free time at the moment so I gotta do what I gotta do!

I used to be the type of person who could eat the same lunch/breakfast every single day but I got SO sick of it, that now I’ve gotten in to taking leftovers from the night before for lunch! I love making a big pot of whatever and then having it for leftovers! Keeps things interesting and from getting dull! I also like to make things that you can use in more than one way!! again, ways to keep it fresh and my taste buds guessing!

I fall into drab breakfasts!! For lunch ruts I literally do exactly what you did today– I let the pantry run low so I have to be creative and not eat the same ole same ole.

My lunches have definitely been pretty drab lately. I’m hoping to spruce them up this month!
And I agree about the winter, it’s only tolerable until New Year’s, then I’m over it.
