Homemade Lasagna

On Saturday Shane had a class all day and though I was a completely pathetic sickie the entire day I still managed to actually do something with my extra alone time. Quite frankly, I felt like throwing another pity party, it just didn’t feel like Saturday without Shane around. Instead though, I made lasagna from scratch. By ‘scratch’ I mean I made the tomato sauce from the green tomatoes that turned red! I picked out the ripe ones and plopped them in boiling water to get the peels off. I boiled them until the skin started splitting then pulled them out to cool enough for my hands! After they were peeled I wanted to make them into a sauce so I sort of made a makeshift food mill out of my sifting strainer and a spoon, just pressing it through to get a smooth sauce. Once the sauce was made I cooked the noodles and whipped up the cottage cheese mix by adding garlic powder and salt to it. I chopped up an onion and grated a few ounces of mozzarella and it was time to put the whole thing together, in my new silicone casserole pan! Baked it for 45min. My only complaint with the silicone is that it’s flimsy as all get out and I had to place a cookie sheet beneath it to get it out of the oven safely.

Ultimate comfort food and I chowed down almost finishing this entire massive plate. Eyes were bigger than my stomach.

Avery and I have been sick for over two weeks now and today, for the first time in his life, he got a fever:(  He was super duper pathetic all day and I was pathetic with him. Shane took this pic while I was off getting Tylenol.

So sad:(

However, I gave him Tylenol, got him to bed (after a first time EVER bath poo, yuck!) and I just checked on him a few hours later and he doesn’t feel hot at all. Thank goodness! I hope he starts getting better soon. I’m thinking this evening hasn’t been as bad for me as the past couple weeks so maybe I’m getting better now finally!

We’ll see. There has been a lot of snuggles and comforting going on and that’s the bonus of all this sick.

Four chins on that buddy, I’m surprised he’s so low on the growth chart. hehe
