Best Saturday Ever

Today has gone from good to even way better! After eating breakfast we chilled for a bit and then headed over to Benetti’s for a cup of coffee….well, I had ginger lemon mint tea which was fantastic. We hung around there chatting and playing the crossword puzzle for a while and then went to find somewhere to try for lunch. After I decided that I MUST have Chinese food we decided to try a buffet not far from us that we’ve never tried before call East Buffet. We loved it! Shane liked it because they had fresh dumplings (made in front of you!) and the sushi had hardcore wasabi to go with it! This wasn’t just Chinese food but Japanese also. I liked it because it was chinese food. haha I have a serious weakness for those salty and sweet flavors. Here was my first plate..

Before I took this pic I ate a springroll too. The bowl next to my plate had some sweet and sour sauce because I can’t eat anything without it. I had another plate that I forgot to photo and cleansed my palate with some cantelope!

Then we went home and I cleaned up the place since Shane had a friend coming over to chill for a while.  I browsed the web during that time then took a lovely nap. The play-offs are this weekend so Shane watched the first game while I read and watched some as well. The game was a blow-out and so he turned the channel to the Food Network and saw Bobby Flay doing a throwdown with buffalo wings and he got the urge to eat them. In case you don’t know Shane has a never ending obsession with eating buffalo wings. If I ever ask, “what do you want for dinner?” I know I will inevitably here a hopeful “Buffalo wings!?”. I usually wait for a some special occasion to make them for him because I HATE frying and I can’t stand breading either. Last week he had talked about learning how to make them himself and I encouraged him so when he asked if we could go get some ingredients for buffalo wings I agreed knowing this would be a learning experience for him. He looked up Bobby Flay’s recipe and we wrote down the ingredients and headed to the store.  After gathering what we needed,

Chipotle peppers in adobo sauce

red wine vinegar

butter

dijon

chicken wings

blue cheese dressing

I had the other ingredients and so we got home and got to work. I decided to use the oven to cook the chicken since in general I use tenders so frying is necessary but with the actual wings that have skin they crisp up. Then we worked on the sauce. Putting red wine vinegar, the pureed peppers, dijon mustard, salt, garlic, chili spice, pepper in a skillet and got it warming up. Once it was warm we put in a WHOLE stick of butter…seemed excessive but it worked out. Then kept spicing and tasting until it was perfect.

It looked and tasted perfect. So once the chicken was done I tossed it in. This whole time Shane was observing ad learning.

Picture perfect! Definitely a different sauce but Shane loved it. I drizzled some over my potato along side a large salad!

So now we’re enjoying the play-offs and I’ll probably read some. Not that football isn’t fun but when it’ excessive I get bored. This game is really competitive so we’ll see:)
