Perhaps I’m still nesting. By ‘perhaps’ I mean, definitely.

Today was grocery day. Usually on grocery day I buy mostly scratch items and then I make bread, granola, etc on the day of if I can since I need those foods for the week. Well, today I got on a roll.

First, I made granola.

I’ll post the recipe tomorrow. I love making granola. So cheap, so delicious.

While that was baking I put together my bread dough….which expanded on me while I caught up on nursing and what not.

It’s alive! I made short work of that though. Can’t have dough going crazy all over the house! No, not acceptable so I made it in to three loaves.

Yum.

While the bread was baking I had beans going outside in the rice cooker. I have said this before but THESE were the best pinto beans I have ever cooked.

Two cups of dry beans, loads of water (didn’t measure), onion powder, garlic powder and almost two teaspoons of salt. Perfection.

After I finished the bread, granola and beans I stepped out on another venture that is new to me. I wanted to fully focus on it (aside from the kids, of course) so I did it after everything else.

The venture? Yogurt. I’ve never made yogurt and though I know it’s simple I just didn’t have the nerve. I kept saying I would do it but this week I finally did.

I used Karen’s method from over at The Art of Doing Stuff and it worked beautifully. So simple and not scary. It turned out beautifully.

Whaaaaa….? So awesome. I doubled her recipe and made two quarts. If you can find inexpensive milk, this is a HUGE money saver. Since I was afraid of failure I just used some non organic milk from Aldi which ran $2.81 per gallon…that means that each QUART of yogurt here cost only $0.70. Which blows my mind.

While it was becoming ‘cultured’ in the garage I cut up some of the bazillion bananas I got on sale to freeze.

I’m not sure how many pounds I got exactly but it was over twenty…..so let’s just say my freezer is stocked and so is my fridge! I use frozen bananas for smoothies, banana/egg pancakes, banana soft serve or just a snack. They are so yummy. I freeze them on cookie sheets and once they’re frozen they go into a bag. That way they don’t stick together.

Anyway, it was a productive day. Also? Avery didn’t have a single accident. Which is quickly becoming the norm these day but it was good to know I can actually get things done with him running around naked and not have to worry about having to stop and clean the carpet or just run around after him to make sure he gets on the toilet and never get anything done.

So now I’m off to bed after feeling super uplifted by watching our country strike gold so many times tonight in the Olympics. Goodnight all!

    All I have to say is, how do you have the energy to do all this??? You are amazing! I hope to try the yogurt recipe- thanks for the great idea!

    Like I said, it’s not human, it’s nesting! I don’t know how I survive on two hours a night….seriously.

    I’m hooked on making yogurt and having it daily for breakfast. I use milk from the dairy then strain it so it is like Greek Yogurt. I only get half as much yogurt as the milk I started with, but I love the creaminess. I make a blend of ground flax (using a coffee grinder designated for seeds and nuts), raw sunflower seeds, pumpkin seed, hemp seed, organic peanuts, whatever other nuts I have around, large flake coconut, and dried fruit. I pour a little real maple syrup over to sweeten and sprinkle my healthy protein mix over and that is so satisfying and it sticks with me until lunch.

    Yeah! You know, my granola is kind of like that…mostly just crammed with nutrients and not extremely granola-esque haha. I mean, a 4th of a cup on yogurt or over my banana/egg pancake is all I need.

    how does Avery do with the potty-stops when you’re our running errands? that’s what is making me the most nervous about venturing into potty training land. i can handle accidents at home, not sure if i can handle one in the isle of Trader Joe’s. ;)

    We haven’t gotten there yet…..and I’m hoping it transitions smoothly. It’ll be pretty easy with a boy to take a potty break even if there are no bathrooms since he could pee on the side of the road if I needed him to. But mostly I need him to communicate and he’s not 100% consistent on that yet. I ask him when I think he needs to go but isn’t communicating and he’ll tell me yes or no but I can’t do that while driving!
