Granola v1.3

Another delicious batch of granola, but not worthy of a version 2.0.

The reason? Well, I accidentally got salted nuts and sunflower seeds….and I forgot coconut flakes.  Otherwise, it would be perfect.

My recipe goes like this.

Granola v1.3

  • 4 cups rolled old fashioned oats
  • 2 cups ground flax seed
  • 1.5 cups mixed nuts (you can chop them or put them in whole if you’re brave!)
  • 1.5 cups chopped or slivered almonds
  • 1 cup honey
  • 1/2 coconut oil
  • 1 cup dried cranberries
  • 1 cups raisins

combine all ingredients but dried fruit and spread on a cookie sheet. Pop in a 350 degree oven and stir every twenty minutes  until nicely browned. It may take about forty five minutes depending on if you spread it thin on two sheets or thick on one. Once it’s done browning allow it to cool before mixing or adding in the dried fruit.

The problem with this granola is that it lacks some of the fun texture that coconut adds,  and there are too many salty…..ummm, well, salty nuts.

So my modifications for next time? Well first of all I am NOT going to forget coconut. Coconut oil can’t hold all the brunt of the coconut load. Secondly, no salted nuts. A sprinkle of salt over a batch of granola is one thing, but a big load of salted nuts is an entirely different one.

Also, more oats. I don’t know why I did four cups of oats, instead of the normal five…but next time I’ll go back to five so that it feels more oaty and less nutty. Although I like the nuts.

However, all that said, it’s super delicious and extremely yummy with my homemade yogurt!

Pretty sure I could live on yogurt and granola, just saying……

    I made your granola [version before this one] about two weeks ago. It’s so rich and full of protein I’m still working on it! I accidentally got salted almonds but I just rinsed them off really well before I baked them. I’m not sure that did much for the texture but after baking I couldn’t tell the difference.
    You are a total inspiration, just so you know.

    I didn’t even think to rinse them!! Genius. I’ll do that next time I make this mistake…because I’ll probably make it again. haha

    your granola has become a staple in our home!! it’s such a great snack and frequently the only thing i can get my daughter to eat for dinner. she calls it cee-ce (cereal). it’s adorable and i feel good about feeding it to her. i made a whoppin’ 16-cups of granola using your recipe before i went into labor knowing that my husband and daughter might very likely live off of it while i was in the hospital (by their own choice, the both LOVE the stuff!!!). let me tell you, the put quite the dent in my supply in the 36-hours i was gone. man, if the only thing i ever took away from your blog was that recipe i’d be a happy mama, but you provide SO MUCH MORE. i’ve gotta say, i’m always impressed by your content and intelligence. you present information in such a generous and sharing manner and there is never any feeling of judgement or better-than-you-ness (you ARE super-mom, you know). your post on protein was SO great! keep it up, lady. XO!!

    I’m SO glad you like the granola and it’s helped you out! It’s a huge help around here too. Mostly just because Avery LOVES it so when I need to focus on Eli and Avery needs a snack I can pour him a little and know he’s getting some nutrients!
