Yesterday was a feelin’ good most of the day so I got alot done. I had to work late again but it wasn’t bad since I didn’t have a headache or anything and when I got home I checked the meal plan…..potato spinach casserole. Hmmm, I remembered using the last of the spinach but I figured I could cook down kale and use that instead. However, to my horror I found that I’m finally out of the greens I saved and froze from the summer and fall. I feel rather devastated on the one side but on the other I’m delighted that they lasted me until February. So, I had to move on to plan B. Which I didn’t have but promptly reviewed my ingredients and decided to put them all in a skillet and it turned out to be very similar to a dish I grew up with called Silver Dollar Skillet.
First I browned onions and potatoes with garlic and salt in some oil.
Once browned I added peppers, corn, and some cured meat, in this case I used chopped pepperoni for lack of another type.
Shane enjoyed it with some hot sauce (see? I’m not the only one!). I had fruit since I wasn’t feeling up to eating salty goods. I had a grapefruit plain and some blueberries (from my Aunt’s berry farm) with some raw organic honey.
The grapefruit was so good I didn’t want to ruin it with sweetener.
I love blueberries too but it seems that when frozen berries become more tart and so a little sweetener is all they need.
An update on my sproutster! It’s getting so big I can barely call it a sprout anymore!
