Can Say

Oh dear, it was a bit of a dud day for me. Definitely headachey, definitely sleepless, definitely have a teether.

Not very productive.

But still, even the worst of my days have shining moments.

I think about four months ago I stopped using salad dressing….and just splash on copious amounts of hot sauce. But isn’t that gorgeous? A little head of lettuce. My parents came up last night and left this bag filled with green pretties for me from their garden.

There’s a plate of cinnamon graham crackers sitting on my counter right now that I’m trying (sort of) to avoid right now.

I made graham crackers for a dessert nachos dish for the super bowl. Now the left overs are taunting me. I think my headache is from sugar though so I should probably avoid them like the plague. The hard thing is that the batch of yogurt I’m making is in the ‘hot milk’ stage and dipping these in that is like pure heaven.

I started back into my regular meal routine these days. I’ve been really sloppy since…well, since I haven’t gotten any sleep. I’d say the last four months I’ve slacked on any sort of food moderation. This past week I’ve gotten back into exercising and eating right and it’s done a world of good for me.

After much thought I decided the breakfast I’d most reliably stick to was my banana/egg pancake. Since the ratio of banana to egg has to be 1/2, and that is actually quite large, I make a whole pancake and split it with Avery. I chose this particular breakfast for a few reasons. The first reason is that it’s versatile. I can use any topping from peanut butter, to yogurt, to honey or maple syrup. The second reason is that it’s something I actually have to prepare. I tend to over eat or eat badly when there’s food I can just ‘grab and go’ without a thought.

Here’s are a couple of my pancakes from this week.

This one has peanut butter, local berry jam, and granola. Also, I put some craisins in with the banana/egg batter. Perfection.

This one has chia seeds, granola and peanut butter…of course lots of coffee is always in order.

I’m enjoying the structure andĀ portioning these provide. Avery is also enjoying having half a pancake…and everything else I can make at high speeds for him. He is seriously eating us out of house and home!

His antics these days deserve an entire post of their own. He’s starting to learn things at a insane rateĀ and with a personality and sense of humor as big as his, that means lots of funny conversations.

Anyway, I can’t say today was great, but I CAN SAY, it was beautiful.

    ohmygoodness. that last picture? heart melter!! thanks for the reminder about the banana pancake. I need to be using that recipe for myself, it satisfies me and is such a simple & whole meal. oh, and our yogurt is fantastic! one little jar that didn’t set (I think it cooled too fast, since it was so small & didn’t ferment enough), but the two large jars are perfect! hope you get some good rest tonight. xX hugs Xx
