So Much To Do, So Little Time

That is my mantra these days. I can’t seem to fit everything into a day or even week! Especially with re-doing our bathroom. Last night I grouted it all by myself! It looks so good!

From the other side….

We used a ‘fawn’ color and I think it complimented the tile color really well! Now all I have to do is seal and caulk! So I’ll be doing the sealing tonight.

Now, this week I still haven’t had a chance to grocery shop but I have still been able to somewhat stick to the meal plan I made on Sunday.

I was able to stick to this without many groceries because we went to my family’s and they gave us a TON of meat that they’ve been raising lately (cows and pigs). My Dad started raising pigs I think in the summer and he’s been butchering them himself. They live in a large area where they have access to some woods and field and a nice little section of the barn. I hate buying meat for Shane’s meals when I don’t know where’s it’s come from and so this is a sure way to know. They’re so generous with us but I’m hoping that soon they’ll let us buy from them on a regular basis. Fresh, local and humanely raised animals. What more could I ask for? So last night I made taco salad and for Shane’s I cooked up some sausage. He really likes pork with any kind of Mexican food.

Then put the cooked pork over corn chips and topped it with lettuce, avocado, homemade salsa and sour cream.

Mine was a little more conservative with no meat or sour cream. Just some chips, lettuce, avocado, red onion and salsa.

So yummy though. I love avocado. Now my fridge is REALLY out of food. haha. I used the last of everything for this! Shane is out of town tonight though and I’ll be visiting friends so maybe I can put off grocery shopping til tomorrow evening:)
