Finally, our plumbing issues are resolved. We had a very nice, local, family owned plumbing business came up and in just a few minutes replaced a valve and another small part and BOOM it was all good. I felt so relieved I decided that if I ever owned a plumbing company I’d use the moto ‘We don’t just fix your plumbing, we bring peace of mind.’ Because that’s what good plumbing is to me.
Now, on to food. I only wanted caramelized onions and that’s what I started making for dinner and I just built a meal around it.
The way I do my onions is basically I put them sliced, in a skillet with balsamic vinegar, water, and salt. I keep refilling the water so that it reduces down while cooking the onions. Once they get to the point I like them I let the water completely reduce so that I get a little bit of searing.
For Shane I made a cheesy, sausage and rice skillet with green peppers.
It almost looks like a rice pudding in this picture! But really it wasn’t quite done thickening and as you can see I hadn’t added the peppers yet. Shane loved it though! Here’s his plate.
He drank some Rye on Rye which is a Boulevard Brewery seasonal and it’s REALLY good but of course I can’t drink it. haha.
Here’s my plate. I had mostly salad with caramelized onions and carrots on top. I also tried a spoonful of the rice dish.
It was alot and I couldn’t finish it but it was quite tasty and definitely helped my craving for onions! Now I’m going to shower and see if I can’t get to bed early again!
